Mahalia Jackson or Nat King Cole singing that carol are pure Christmas spirit and everything wonderful I feel about Christmas. Growing up, December 1st always meant the arrival of  Mom’s stack of Christmas albums; the Advent wreath, a stiff wire form covered in fresh greens, red berries, and ribbons, topped with four candles – three purple and one pink; and the Advent calendar tacked to the kitchen door to the basement.  The season had arrived and cookies were not far behind!

Taco Seasoning

3 Tbs chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp crushed red pepper flakes (or to taste)
1 1/2 tsp sweet paprika
1 Tbs teaspoons ground cumin
3 tsp kosher salt
3 tsp black pepper

Put all ingredients into a jar with a tight-fitting lid and shake.  This will last a few months in the pantry.

If using for tacos, start with 2 tbs per pound of meat and add to taste. When I use 1 lb meat and 1 can (rinsed and drained) black beans, I use 3 tbs of taco seasoning.
