HAM AND CHEESE STUFFED MEATLOAF

Mom's recipe for the most flavorful, moist meatloaf stuffed with salty ham and gooey mozzarella cheese. A crowd-pleasing dinner and possibly even better next-day sandwich.

Ingredients
  

  • 2 large eggs beaten
  • 3/4 cup Panko breadcrumbs
  • 1/2 cup George's Bloody Mary Mix can use tomato juice or V-8
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp dried oregano
  • 1 tsp salt Diamond Crystal or other Kosher
  • 1/2 tsp black pepper freshly ground
  • 2 cloves garlic minced
  • 2 lbs. ground beef no leaner than 85/15
  • 8 oz thin slices baked ham
  • 8 oz thin sliced mozzarella DIVIDED or 8 oz shredded

Instructions
 

  • Preheat oven to 350F.
  • Combine eggs, bread crumbs, George's or tomato juice, parsley, oregano, salt, pepper and garlic in a large bowl.
  • Add the ground beef and, using your hands, mix well.
  • On plastic wrap or waxed paper laid out on the counter, pat the mixture into a 12 x 10" rectangle.
  • Arrange ham slices evenly over the meat.  Do the same with 6 oz of the mozzarella slices (or shreds).
  • Using the plastic wrap to keep the log even, roll jelly roll style.
  • Put the meatloaf onto a foil-lined (with a little olive oil to prevent sticking) pan and bake for 1 1/2 hours. Tuck in the ends so the filling doesn't melt out.
  • The internal temperature should read 145.  Put remaining 2 oz of cheese on top and return to oven for 5 minutes to melt cheese.
  • Remove from oven and let cool for 15 minutes before serving.
  • Doubles easily.  Please let me know if you ever triple it.  And take pictures!
